Kumara Salad

This is a favourite the sweet taste of kumara, the sourness of balsamic and the aromatic nature of coriander leaf.

Ingredients

  • 2-3 medium kumara

  • 2-3 rashers of bacon

  • A bunch of coriander

How to Prepare

  1. Cook the kumara, yellow are the best as it stays firm and cut into cubes. Place in salad bowl.

  2. Cook the bacon and cut into small pieces. Try nitrate free bacon as it has fewer chemicals. Nitrate is an unnecessary addition as its function is to preserve colour not flavor. Place in the salad bowl.

  3. Finely chop the coriander and place in the salad bowl.

  4. Make a dressing of olive oil and balsamic vinegar in the amounts you desire for your taste buds. Add to the salad bowl.

  5. Mix and eat.

  6. You might want to add pine nuts or quinoa as an experiment.
